As usual, I did some substituting ... and, it didn't turn out quite right, but it was still very tasty. It turned out more pudding-like than cheesecake ... I'll have to work on it more! Ha!<br />

It's been nearly 3 years since I posted on this blog! I hope to remedy that and post here more often this year!<br />
Today, I was determined to bake a cake. But, with both of my ovens (built-in gas oven and countertop portable oven) not working, my choices were the tiny toaster oven and my mom's bulky NuWave oven. So, I decided to look up vintage ways of baking. I figured using a Dutch oven (large cast iron pot with a lid) might work ... but, I couldn't fit any of my racks in my large one! Finally, I decided to try my big water-bath canning pot! Perfect!<br />
I used this cake mix that I had bought last year and had forgotten in the fridge crisper drawer! I made the mix according to the directions.<br />

I pre-heated the pot on medium. Poured the batter in muffin cups. Put the muffin tray on the rack inside the pot (if you put the pan directly on the bottom of the pot, the baked item will burn on the bottom.) Put the lid on the pot. Cook for about 10 minutes, then lower the stove temp to low. Cook 15-20 minutes more. Check doneness with a toothpick. Your pot size and stove may vary from mine, so you may have to adjust cooking time slightly. This made 10 cupcakes<br />

I also made a cinnamon/cream cheese frosting. Just mix all ingredients together, until smooth.<br />
2/3 cup powdered sugar<br />
1 T. vanilla<br />
1/6 cup olive oil<br />
1/6 cup melted butter<br />
4 oz. cream cheese<br />
1 t. cinnamon/sugar mixture<br />
It turned out perfectly! It was just enough for all the cupcakes.<br />

I didn't have all of the ingredients, so modified it a bit:<br />
<br />
1 tablespoon olive oil<br />
1 tablespoon butter <br />
3 carrots, shredded<br />
1 fennel, diced<br />
1/4 teaspoon fennel seed<br />
1/4 teaspoon parsley<br />
1/4 teaspoon cumin<br />
1 tablespoon butter<br />
1/3 cup milk<br />
<br />
Sauté carrots and fennel in olive oil/butter mixture on medium-high, until slightly tender and browned.<br />
Lower temperature and add spices, continue stirring until mixed with vegetables. Add butter/milk mixture and cook until absorbed.<br />
Fennel will have a slight 'crunch'. The carrots lend a sweetness.<br />

I went to a class at my local co-op and received a SCOBY (<u>S</u>ymbiotic <u>C</u>ulture <u>O</u>f <u>B</u>acteria and <u>Y</u>east.) I checked it this afternoon and it was at just the right amount of sweet/tart flavor for me. And, each jar had a very nice looking baby SCOBY on top! Now, ideally, you should use a plain black tea to ferment your kombucha. The SCOBY needs the caffeine, as well as sugar to thrive. Sadly, I have none! So, this first batch was made with a pomegranate white tea. It did better than I expected! For my second batch, I found some lemon-ginseng green tea in the back of my fridge! So, we shall see how it goes. I will definitely have some black tea for future ferments!<br />
<br />
Here's the recipe for you to try out once you acquire a SCOBY:<br />
<br />
For a half gallon batch:<br />
half gallon filtered or spring water<br />
5 plain tea bags or 5 heaping teaspoons loose tea (black is best, but can use green or white in a pinch)<br />
1 cup organic sugar<br />
1/2 cup kombucha or 1/4 cup white vinegar<br />
SCOBY<br />
half gallon jar or 2 quart jars<br />
cheesecloth or other 'breathable' cloth to cover jar<br />
<br />
2 weeks later:<br />
smaller bottles (swing-top is best if you want 'fizz') or jars<br />
herbs or fruits for flavoring<br />
<br />
Primary fermentation:<br />
Wash your brew jars thoroughly.<br />
Boil 3 cups of water and add 1 cup of sugar, stirring until sugar is dissolved.<br />

Add tea bags or tea ball of loose tea and let steep for at least 15 minutes. Let tea cool to room temperature.<br />
Pour the tea into the brew jar and top with water, leaving a couple of inches of space at the top. Add 1/2 cup plain kombucha (or 1/4 cup vinegar if you don't have any, yet.)<br />
Add the SCOBY.<br />
Cover jar with cheesecloth.<br />
Place in a warm, dry place away from the sun for 10-14 days. Ideal temperature is 65-90 degrees as colder temps will take longer to ferment.<br />
At about 10 days, taste it by dipping a straw or wooden spoon under the SCOBY. It should taste slightly sweet, yet a little tart and have a bit of a fizz. If it is too sweet, let it ferment a few more days.<br />
<br />
Secondary ferment:<br />
Wash bottles thoroughly.<br />
Remove SCOBY. It will have another layer on top of it - the 'baby' (sometimes separate, sometimes directly attached to the 'mother' and you will have to peel them apart.) One you will use for the next brew, the other can be saved (in a SCOBY 'hotel' - see below) or given away.<br />
Put the SCOBY mother and baby in a cup of the brew in a bowl and set aside.<br />
Put fruit or herbs for flavoring in bottles. It takes very little. Two small berries or 1 teaspoon of herb is enough for each bottle.<br />

Use a funnel to pour the kombucha into each bottle.<br />
Fill the bottles leaving about an inch space at the top. Close tightly.<br />
Set in a warm place for 2-3 days, allowing the carbonation to build up. 'Burp' the bottles once a day to prevent possible explosions.<br />

SCOBY 'hotel':<br />
Use a quart jar to house your extra SCOBYs. When you separate your 'mother' and 'baby' after each batch, add your extra to the hotel. Making sure to keep each addition covered with plain kombucha. Store in the back of a cupboard.<br />
There are quite a few things you can do with your extra SCOBYs. Share with a friend; dehydrate and make dog treats; save as back-up if your main SCOBYs get contaminated; among other things.<br />

We had a baked organic whole chicken infused with homemade bone broth (via syringe) & rubbed with rosemary, thyme, garlic salt and pepper; chicken gravy; wild rice blend and millet with lots of butter; dressing made of chopped chicken offal (the heart, gizzard and liver from the chicken), wild rice blend, millet, cranberries, apples, olives, gluten-free croutons, walnuts and pine nuts); homemade tapioca pudding with apples and cream; gluten-free rolls with lots of butter; and, milk.<br />

(which is NOT a real starch, it is a fiber.) I got interested recently
in it when Steve Cooksey (<a href="http://www.diabetes-warrior.net/2013/12/12/my-personal-n1-resistant-starch-experiment/" target="_blank">The Diabetes Warrior</a>)
started posting about his experiments with it and where he got the
idea. So, I have been reading more about it all on Richard Nikoley's
blog, <a href="http://freetheanimal.com/2013/12/resistant-primer-newbies.html" target="_blank">Feed The Animal</a>.
I am going to start on it and by next month, I will have my mom on it. I
am not diabetic, but she is. The LCHF (adapted Paleo) lifestyle has
done wonders for both of us. But, this may help a bit more. I am
starting with 1 tablespoon of <a href="http://www.amazon.com/gp/product/B0013JOKBC?ie=UTF8&camp=1789&creativeASIN=B0013JOKBC&linkCode=xm2&tag=quinsaffi-20" target="_blank">Bob's Red Mill Unmodified Potato Starch</a>
a day and will work my way up to 3 or 4. I am splitting it up. A
teaspoon, 3 times a day, mixed in liquid. Right now, I have 1 teaspoon
in my milk kefir with vanilla and maple syrup. I'll have some in water
later and also in my milk with dinner. Potato starch has no real flavor,
so can be put in many things easily. I think this would help a lot of
people to add this to their food, as it works a bit like a pre-biotic
and helps feed the pro-biotics in your gut. Most of us, at some point in
our lives, took antibiotics and killed most (if not all) the good
bacteria in our bodies and absolutely HAVE to re-populate them to
thrive. Grocery-store yogurt WILL NOT do it. (If you are outside of the
US and Bob's Red Mill is cost prohibitive, I think <a href="http://www.gracefoods.co.uk/gallery.asp?catID=13" target="_blank">Encona Farina</a> is the equivalent in the UK - from what I read on the Feed The Animal blog comments.)<br />

As
for my milk kefir. I've had it hibernating in the fridge since my
farmer dried up his last cow. The other is due in January, so hopefully,
I will start getting colostrum and then milk soon after from them. But,
I have missed my kefir. So, I just changed out the milk. The kefir is a
bit more sour than I like, but still very good. The weird thing is, the
jar that had raw milk had HUGE kefir grains. The jar that had
pasteurized (<a href="http://strausfamilycreamery.com/products/item/organic-whole-milk" target="_blank">Straus Whole Milk</a>) hadn't grown at all. That is after more than a month in the fridge. So, when I got a bunch of purple cauliflower the other day, I was stumped as to how I wanted to cook it. Then, someone posted creamed cauliflower on their timeline and I thought I might try something like that! I adapted it slightly for the ingredients I had on hand, mainly the cheese. I was out of Cheddar, so I used about 1/4 cup of Organic Valley Shredded Mexican Blend and 2 wheels of Babybel Original cheese. I also didn't have sour cream, so I topped it with crème fraîche!<br />
It turned out pretty good! We had it with local grass-fed beef cross rib roast. Soooo good.<br />

Turkey thighs stuffed with fresh sage, rosemary and thyme. Garnet yams with lots of butter. Green beans, pearl onions, Granny Smith apples, dried peppers, dried tomatoes all steamed together. With milk. And, a dessert of sliced Pink Lady apples in a dip made of pumpkin pie filling, mascarpone, Crème fraîche, cinnamon and ginger and topped with walnuts and raisins.<br />

Just 3 ingredients!<br />

1/2 lb. bacon, cut in 3-inch lengths<br />
2 small summer squashes, cut in 1/2-in slices<br />
1/4-cup grated pepper jack cheese<br />
<br />
Fry bacon in cast-iron pan until crispy, on medium heat. Lower heat, then add squash. Cook until squash is tender and slightly browned, stirring occasionally. Turn onto plate. Top with cheese. The heat from the bacon and squash will melt the cheese nicely.<br />

This was really good and served one. Moi!<br />

I started out trying to use the starter cultures that you can find in the store. But, that got expensive since they don't really multiply well. I purchased real milk kefir grains about two weeks ago. They arrived last week. I covered them in raw whole milk and set them on my counter. Today, I finally had the time to do something with them. I may have left them a little longer than necessary, but they seem happy. They've multiplied already! As I said, I may have left them a bit too long - the kefir is slightly cheesy-flavored, but otherwise good.<br />
<br />
I started off with a bit over 1 tablespoon of grains. I split them among 4 jars. Covered each with 1 cup of raw whole milk. Set on the counter for 5 days at room temperature.<br />

Just allow the kefir to drain. Don't mash it through the strainer. You don't want to lose too many 'baby' kefir grains.<br />

Milk kefir is very versatile and one of the best ways to get probiotics. You can drink it as-is, mix in fruit, honey or vanilla (or other extracts to your taste), use in smoothies, cold soups and much more. So we each had 2. My mom added pine nuts to the batter. Loved that little bit of crunch. Topped with lots of butter and maple syrup!<br />

2 eggs (I actually used 2 chicken and 2 dove eggs this time)<br />
½ small squash (I used Carnival, but Acorn, yellow or other would do) - de-seeded and diced<br />

Cook bacon (I baked mine - 350°F. for 30 minutes, until crisp).<br />
<br />
Heat butter in 2 small cast iron pans.<br />
In one, fry onion until transluscent. Add squash and Jalapeño. Stir in bacon. Cook until squash is tender. Stir in cumin to taste.<br />
In the other pan, fry the eggs. Sprinkle with cumin to taste.<br />
