Honey Fried Plantains Recipe

I found this recipe on Clean Eats in the Zoo. I've only had plantain once and made the mistake of eating it raw like a regular banana. I'm so glad I found this recipe. OMG!! So. Good!

2 organic plantains
3 Tablespoons B0052AIF00 Dr Bronner's Virgin Coconut Oil



2-3 Tablespoons local raw honey
3/4 teaspoons B005P0SA16 Simply Organic Cinnamon Powder
pinch of salt
Cut the ends off the plantains, peel and slice into 1/4-inch thick 'coins'. 
Heat the oil in a large cast iron pan (I used #9); stir in the honey, cinnamon and salt. Add the plantains.  Cook on medium, stirring the plantains until coated and flipping occasionally to brown both sides.
Serve with more honey drizzled on top.
Serves 2.

Apple Bacon Hash Recipe

I originally found this on Facebook shared by Just Eat Real Food. It is sooo good.

1/4 cup unsalted Pasture Butter

2 organic Pink Lady apples, cored and sliced
1/2 cup pecan halves (not in first picture)
1 pound bacon
2 Tablespoons Shredded Parmesan cheese
Melt butter in large cast iron pan (I used a #9). Slice and core apples. Cut bacon in small pieces. Add apples and pecans to pan and sautè. Add bacon and cook on medium heat until done and apples are slightly browned; stir occasionally.
Top each plateful with 1 Tablespoon cheese.
Serves 2.

Lunch: Grape-Nut Salad; water

Snack: Lavender tea

Dinner:
Halibut baked in mixture of Panko*, sesame seeds, thyme, salt, pepper and butter; mashed sweet potatoes fried in bacon grease; raw milk
*I thought I'd gotten rid of everything in the house containing wheat a while back, but I found a couple of pint jars with some Panko. So going to use it up eventually. One jar left now.
