Spinach and Onion Scrambled Eggs recipe

2 organic pasture eggs
black pepper, to taste
red pepper flakes, to taste
2 Tablespoons organic whole whipping cream (I use Straus)
4 fresh organic green onion leaves (about 6 inches long), chopped into 1/2-inch slices
1/2 cup frozen spinach, thawed
1/4 cup organic raw cheddar cheese, shredded

Scramble first 5 ingredients together. Pour into heated cast iron skillet that has melted bacon grease. Tilt pan to spread eggs. Cook until egg does not run. Add spinach, then fold omelette over. Slide into plate; cut in pieces. Add cheese on top.
As you can see, I like my eggs well done! They were yum!!

Stir-fry Vegetables with Lamb Patties recipe

I was inspired to make this by +Steve Cooksey!

Ground Lamb (enough to make 2 patties)
Freshly ground salt & black pepper to taste
Bacon Grease

Shape meat into patties. Cook on medium-high in bacon grease in cast-iron pan. Sprinkle salt and pepper on one side. Turn. Cook until done. Remove patties. Pour off excess grease into grease jar or another cast-iron pan.

1 organic red bell pepper, sliced
1.5 cups organic broccoli, cut into bite-size chunks
1/2 organic white onion, sliced
2 teaspoons red pepper flakes
1/2 teaspoon garlic salt

Add these ingredients to pan and stir-fry until very tender.

Top meat and vegetables with shredded organic raw cheddar cheese.
 This served 2.

I know, I know! I haven't updated this blog in over a week. I am going to be changing a few things on here and may not be posting on it as often, but hopefully will have more interesting posts. I will also be adding a few 'pages' to it in the future. Now, to the recipe! I got the idea on this from Steve Cooksey.

1/2 cup Straus Organic Plain Whole Milk Yogurt
1/2 cup Straus Organic Whole Cream
1 cup Organic Blackberries (or favorite berry)
1 Tablespoon Organic Raw Shredded Coconut
1 Tablespoon Organic Raw Dehydrated Almond Pulp

Fill bowl in order of ingredients. Enjoy!

Organic Spring Salad recipe

I didn't take a lot of pictures for this other than the final result, which turned out great. ALL ingredients are organic! Surprisingly, I forgot to add black olives (usually a staple when I make salads!)

This was inspired by +Jedha D on Google+.

1 cup Fresh Spring Lettuce Mix/Fresh Baby Spinach
1/2 Heirloom Tomato, cut in thin wedges
3 inches of Green Cucumber, sliced thinly
1 Tablespoon raw Sunflower Seeds
1 teaspoon raw Hemp Seeds
1 slice Llano Seco Thick-cut Uncured Bacon, fried in its own juices, cut into 1/2-inch square pieces
2 hard-boiled Pasture-raised Eggs, sliced
1/2 cup shredded Greenbank Raw Mild Cheddar Cheese
Bragg's or favorite dressing, to taste

Organic Raw Almond Flour recipe

I've been having trouble trying to use up all of my (nearly unending!) supply of almond pulp since I started making my own almond milk. I have been saving some in the freezer for later use and also putting some in the compost. But, since I make milk every 2 days, it was getting out of hand! So, I finally did a search on how to make almond flour! I love to bake, so always run out of organic whole wheat flour. So, this will come in handy!

1 cup of organic raw almond pulp

Crumble the almond pulp evenly onto solid dehydrator tray. Dehydrate at 115F for 6-8 hours.
Slowly add about half of the dehydrated pulp to blender. Pulse blend until pulp becomes a fine powder. May take several pulses and several minutes. Pour almond flour into glass jar using a funnel. Repeat for remainder of pulp.
Store in the refrigerator.
It's hard to tell in this picture, but it is very fine powder.
(I do not blanch - remove the skin - from my almonds, so this makes a colorful flour.)
