Breakfast - February 24, 2013

This was a sweeter meal than I usually have, but pretty good for a change. I found the recipe here: Sweet Cinnamon Banana Crunch
I think it would've been really good with some chopped nuts, too. May try it another time.

Lunch - February 22, 2013

Today's lunch was a last-minute purchase. I had to go to the store for a few things and found that I had some bonus points for a discount on angus chuck roast. So, I couldn't pass that up.
I rubbed it in butter and sprinkled it with Trader Joe's 21 spice mixture (love that!)
Broiled it on low for 20 minutes on both sides and done!
My mom took half for her lunch, so this was mine. So good and juicy! I'm stuffed.

Onion-roasted Ribs Recipe

I found the original recipe here: Caveman Cuisine's Roasted Beef Ribs
I followed the recipe for the most part. Although, I don't cook with wine, so I used water for the sauce. I would've used bone broth, but I forgot to thaw some out! I cooked in a cast iron skillet. And, we had 4 ribs each, rather than the 2 in the recipe.
This turned out so darn good! The sauce was the clincher! We also had banana with almond butter, and milk.

Dinner - February 18, 2013

So, my mom really likes her NuWave oven. I still don't. She wants to cook everything in it! So far, the only thing I think turned out alright was the Cornish game hens last night. Everything else is either raw inside or tough and dry.
Tonight we had a really nicely marbled beef chuck roast. With Trader Joe's Dukkah spice blend rubbed on it.

It may look really good. And, the flavor was good ... but, tough and dry ... I ate half, though. It was huge! I will have the other half tomorrow. Drowned in butter!

Breakfast - February 18, 2013

I bought this unusual artisan sausage from my local co-op a few weeks ago and it's been waiting in the freezer for me to remember it's there! So, last night I moved it to the fridge to thaw out overnight. This is what I had this morning for my rarely eaten breakfast:
Buffalo Cranberry Sausage
Pastured Eggs, sprinkled with Trader Joe's 21 Seasoning mix and Chipotle pepper flakes
Fried in Bacon Grease!
 I cut the sausage down the middle to cook more thoroughly.
So good!

Lunches and Dinners - February 17, 2013

I have been lax in posting these this week! I took the pictures and they've just been languishing on my desktop! So, here are some of this week's lunches and dinners!

February 13 - Lunch
This salami is so good. It is not overly spicy, but just right. I actually had 5 slices and 5 crackers.

February 16 - Lunch
The same salami, but on Mestemacher whole rye and almond bread with lots of butter. So yum!

February 17 - Dinner
Tonight's dinner was so good! Cornish game hen with Trader Joe's Dukkah nut & spice blend! I love that blend! Ate half the bird; will have the rest for lunch tomorrow. We also had dates stuffed with Bellwether Farms Créme Fraiche and pecans. Mmmmm.

Vinegar Oven Cleaner Recipe

I found this recipe for cleaning your oven without harsh poisons: Make Your Own Inexpensive Natural Oven Cleaner
So, I'm giving it a try on our nasty oven and broiler. I love using the broiler, but it was starting to 'smoke', it had gotten so filthy!
Following the directions, I got together all the ingredients.

1 Tablespoon Dr. Bronner's liquid Peppermint Castile Soap
1 1/2 cup baking soda
2-4 drops lavender essential oil (you can use any scent you like, or none at all)
1/4 cup organic white vinegar (you can also use apple cider vinegar)
Water, as needed to make a “paintable” but thick paste
Mixed them in a bowl, and used a basting brush to 'paint' the oven! Looks messy, doesn't it! ;)
I'll let all of that set for a few hours before wiping it off. Hopefully, it will all be sparkly!

Well, I think it worked pretty well since the oven and broiler were so filthy to begin with. I left most of it overnight. It may take a couple more pastings to get the oven door and the shelves really clean, though. And, there are still a few areas on the broiler pan to work on. But, I am happy with it. I'll use this recipe again.

Lemon/Vinegar Cleaner Recipe

There are so many things you can do with lemons and vinegar. They are both great for cleaning things. Together, they clean nearly everything! I found this article, which had some great recipes. Here is a similar article using orange peels.
I've been saving up lemon peels (with a few Clementine peels) for a month in the freezer to have enough to fill a gallon jar. Then, poured about 2/3 gallon of white vinegar over them. I will let them sit for about 2 weeks before straining out the citrus peels. The resulting liquid will be stored in an empty vinegar jug as refills for the spray bottle.

Lunch & Dinner - February 10, 2013

Today I turned 50. If I had kept eating the way I had for the first 47 years of my life, I doubt I'd be saying that. I was in constant pain and nearly bedridden and had started walking with a cane. My asthma and allergies were getting worse every year. No more! You, too, can take control of your health by eating like our ancestors. Not our recent ancestors of the 19th and 20th centuries! They had already succumbed to the greed of the processed food and man-made drug barons. I'm talking about ancestors from 200 years ago and more. Simple, whole foods were what made humankind survive for thousands of years before corporations decided to take over the food chain and brainwash the masses.

This was my lunch and dinner. It was very good!

Lunch:
Lamb steak and sweet potato hash browns fried in bacon grease.
Dinner:
Hot wings!!

Lunch and Dinner - February 9, 2013

Made some really yummy meals today. I very rarely eat breakfast or snacks these days. I seem to get more than enough fuel from lunch and dinner. I do have tea at about 4pm, water throughout the day and raw milk with dinner. That's it. I am wheat/gluten-free and nearly grain-free (occasional rice, wild rice, rye or quinoa, but not often.) Although rye does have some gluten ... hmmm.
Lunch today was a grilled cheese and tomato sandwich with a side of raisins and pine nuts.
Dinner was an experiment. Our very first taste of acorn squash. I love it! I seem to like all the squashes we have tried. Tonight, I started way too late for our normal dinner time, but my mom said it was worth the wait.

Since I didn't have any 'breakfast sausage', I used two of the artisan
sausages I get at our local co-op and opened up the 'tubes' and squeezed out the meat. It was hot Italian sausage! Whoowee, was it spicy! But, so good! The 'tubes' didn't go to waste - Nikky loved them!
I had to cook it longer than the recipe directed, as I can't stand a runny egg. So, after adding the egg, cook the length of time it takes to bake the egg to your taste. You may have to check it several times.

Dinner - February 6, 2013

Another simple and quick dinner. Very Paleo-friendly.
Sliced sweet potato fried in bacon grease and sprinkled with dried rosemary and white pepper. Baked beef heart, rubbed with salt, black pepper, garlic powder, parsley and Italian seasoning.
