Dinner tonight was leftover roast beef. I heated it up in the oven with lots of butter. I added a chunk of one of my favorite cheese on the side - Clawson Scarlet White Stilton® & Cranberry. Simple, but good!

Today's lunch is an open-face ham (Applegate Farms honey ham) and pepper jack cheese pumpernickel sandwich and sliced tomato with mascarpone (BelGioioso) and chipotle powder. I think I am in love with mascarpone. This is the first time I've tried it. I may like it as much as Crème fraîche!
