Thanksgiving Dinner 2013

Although we don't really 'celebrate' Thanksgiving here, we did make up a nice dinner tonight.
Turkey thighs stuffed with fresh sage, rosemary and thyme. Garnet yams with lots of butter. Green beans, pearl onions, Granny Smith apples, dried peppers, dried tomatoes all steamed together. With milk. And, a dessert of sliced Pink Lady apples in a dip made of pumpkin pie filling, mascarpone, Crème fraîche, cinnamon and ginger and topped with walnuts and raisins.
MMMMMMMmmmmmm.

Snack - March 15, 2013

I loooove raspberries. I loooove Crème fraîche. I loooove cinnamon. Put them together and there is tonight's snack! I don't snack that often any more, but was in the mood for something tonight.

Honey Fried Plantains Recipe

I found this recipe on Clean Eats in the Zoo. I've only had plantain once and made the mistake of eating it raw like a regular banana. I'm so glad I found this recipe. OMG!! So. Good!

2 organic plantains
3 Tablespoons B0052AIF00 Dr Bronner's Virgin Coconut Oil



2-3 Tablespoons local raw honey
3/4 teaspoons B005P0SA16 Simply Organic Cinnamon Powder
pinch of salt
Cut the ends off the plantains, peel and slice into 1/4-inch thick 'coins'. 
Heat the oil in a large cast iron pan (I used #9); stir in the honey, cinnamon and salt. Add the plantains.  Cook on medium, stirring the plantains until coated and flipping occasionally to brown both sides.
Serve with more honey drizzled on top.
Serves 2.

Cinnamon Butter Bites Freezer Candy Recipe

I originally found this recipe here: Cinnamon Butter Bites. A modified it slightly.

1 pound pasture butter, softened
1 tablespoon local honey
1 tablespoon cinnamon
1 1/2 teaspoons vanilla extract
Add butter, cinnamon, honey, and vanilla extract to your food processor. Process for a couple of minutes, mixing ingredients until it looks like whipped frosting. Stop food processor and scrape down the sides of bowl, as necessary.
Line a baking sheet that will fit into your freezer with parchment paper. Place bite-size spoonfuls of butter mixture onto parchment paper-lined tray.
Freeze for an hour or two until hard, then remove from parchment paper and store in a covered container in your freezer.
These will literally melt in your mouth!
