Although we don't really 'celebrate' Thanksgiving here, we did make up a nice dinner tonight.
Turkey thighs stuffed with fresh sage, rosemary and thyme. Garnet yams with lots of butter. Green beans, pearl onions, Granny Smith apples, dried peppers, dried tomatoes all steamed together. With milk. And, a dessert of sliced Pink Lady apples in a dip made of pumpkin pie filling, mascarpone, Crème fraîche, cinnamon and ginger and topped with walnuts and raisins.
MMMMMMMmmmmmm.

Sweet Potato Chips Recipe
I found this recipe here: Homemade Sweet Potato Dog Treat Recipe
I used 2 small organic garnet yams and sliced them into 'coins'.
This filled 3½ trays in my dehydrator. I set it for 135ºF and dried them overnight. Turned out nice and crunchy! You could sprinkle them with various herbs before drying, but they are tasty by themselves. You could also use them with your favorite dip. I like them, as do my dog and bunny!
The dried chips filled a 1-pint jar.

Dinner - March 14, 2013
Today was a very long day. Traveled over 40 miles on my bike today. Got home after 6. My mom made a quick meal of sliced hot dogs (uncured chicken Rocky Dogs), raw sauerkraut (Sonoma Brinery) and sliced sweet potatoes fried in bacon grease and sprinkled with lemon pepper. Yum!

Dinner - March 10, 2013
Such a good dinner tonight. I just love lamb in any form. This was broiled lamb shoulder chop with Trader Joe's 21-spice blend sprinkled on it. Sweet potato slices fried in bacon grease (my mom over-cooked them a bit - some were a bit crispy like chips, but still good.) Tomato wedges with Bellwether Farms Créme Fraîche.

Dinner - March 5, 2013
My busy day ended with a very good meal.
My mom used the last of the BBQ sauce I made for her the other day (I'll have to get that recipe up on the blog later in the week.)
She coated a whole chicken leg/thight with it and NuWaved it. Then, there were yummy mashed sweet potatoes with butter. And, a nectarine to top it all off! So good.

Lunch & Dinner - February 10, 2013
Today I turned 50. If I had kept eating the way I had for the first 47 years of my life, I doubt I'd be saying that. I was in constant pain and nearly bedridden and had started walking with a cane. My asthma and allergies were getting worse every year. No more! You, too, can take control of your health by eating like our ancestors. Not our recent ancestors of the 19th and 20th centuries! They had already succumbed to the greed of the processed food and man-made drug barons. I'm talking about ancestors from 200 years ago and more. Simple, whole foods were what made humankind survive for thousands of years before corporations decided to take over the food chain and brainwash the masses.
This was my lunch and dinner. It was very good!
Lunch:
Lamb steak and sweet potato hash browns fried in bacon grease.
Dinner:
Hot wings!!
