Shrimp Dinner
I bought some lovely fresh shrimp from Whole Foods yesterday on sale. It was already split and deveined, so I just had to peel the shell off. I decided to try out a coconut batter. I based it on the recipe found here: http://www.grouprecipes.com/20412/coconut-shrimp-with-nuts-and-panko.html But, I used raw almond pulp in place of the blanched almonds. All of my ingredients are organic; the shrimp was farmed.
I also made roasted fingerling potatoes. I covered them in about 1 Tablespoon of olive oil & 1 Tablespoon of Bragg's ginger/sesame salad dressing. Baked at 400F for about 30 minutes. (I really need to replace that pan!)

I halved the recipe. I used the exact same ingredients, so I didn't want to waste the cacao powder if I am going to have a reaction to it (chocolate.) I haven't tried them yet, they are still in the fridge, setting. Can't wait!

No More Munchies
My mom had the revelation this evening that the way we are eating now, she is not hungry ALL the time. I can remember when she rarely went an hour without having to snack on something. It drove me crazy! This is big for her to realize this change is going on.

Co-op Goodies
I went to the food co-op in Davis this morning and got some good food. And, I found raw Macadamia nuts!! Very small amounts in little bags, but just the right size for a recipe I want to make when I get home tomorrow. I am soaking them now. They are huge compared to the roasted-to-death nuts my mom used to buy in the jar. I do still have an order coming through the mail for raw Macadamia nuts that I bought on eBay a few days ago.
I also found organic red plums. They are so pretty. I haven't seen any like them in the regular grocery in ages.
And, I also got in the mail, the butter oil/fermented cod liver oil capsules I ordered! Going to now add it to my daily regimen for my teeth, following the advice of Weston A. Price, DDS.

Dinner Salad
Had a good dinner tonight of a large salad. It was just a regular salad of lettuces, olives, sprouts, yellow tomato, sliced almonds with Bragg's salad dressing.
