My busy day ended with a very good meal.
My mom used the last of the BBQ sauce I made for her the other day (I'll have to get that recipe up on the blog later in the week.)
She coated a whole chicken leg/thight with it and NuWaved it. Then, there were yummy mashed sweet potatoes with butter. And, a nectarine to top it all off! So good.
Organic whole food recipes made without modern over-processed ingredients. Common sense tips, videos and other interesting things I find along the way.

Few meals are easier or quicker to make than simple bacon and eggs or sausage and eggs fried in pasture butter. And, it's easy to add a little extra before putting it all on your plate. I added a few dandelion flowers I picked about 15 minutes beforehand while I was hanging clothes on the line! The flowers were quickly seared and the meal was ready!
So good!
So good!

6 Healthy Fats You Should be Eating

TODAY'S THRIFTY TIP from GopherCentral.com newsletter:
Tomato-based pasta sauces:
A jar of spaghetti sauce typically runs $2 to $6. The equivalent amount of canned tomatoes is often under $1. Our suggestion: Make your own sauces from canned crushed tomatoes or fresh tomatoes particularly in the summer, when they are plentiful, tasty, and cheap. The easiest method is to put crushed tomatoes (canned or fresh) into a skillet, stir in some wine or wine vinegar, a little sugar, your favorite herbs, and whatever chopped vegetables you like in your sauce and let simmer for an hour.
Gluten-free baked goods:
If you aren't diagnosed with celiac disease or a gluten intolerance, keep in mind that gluten-free doesn't necessarily mean healthyand gluten-free baked goods like bread, cookies, and crackers often are packed with more refined flours, artificial ingredients, and sugar than traditional baked goods. Plus, they can cost up to twice as much as you'd normally spend.
Powdered iced tea mixes or prepared flavored iced tea:
Powdered and gourmet iced teas are really a rip-off! It's much cheaper to make your own iced tea from actual (inexpensive) tea bags and keep a jug in the fridge. Plus, many mixes and preparations are loaded with high fructose corn syrup and other sugars, along with artificial flavors. To make 32 ounces of iced tea, it usually takes 8 bags of black tea or 10 bags of herbal, green, or white tea. If you like your tea sweet but want to keep calories down, skip the sugar and add fruit juice instead.
'Snack' or 'lunch' packs:
These 'all-inclusive' food trays might seem reasonably priced (from $2.50 to $4.00), but you're actually paying for the highly designed label, wrapper, and specially molded tray. They only contain a few crackers and small pieces of cheese and lunchmeat. The actual edible ingredients are worth just pennies and are filled with salt.

Breakfast - February 24, 2013
This was a sweeter meal than I usually have, but pretty good for a change. I found the recipe here: Sweet Cinnamon Banana Crunch
I think it would've been really good with some chopped nuts, too. May try it another time.

Lunch - February 22, 2013
Today's lunch was a last-minute purchase. I had to go to the store for a few things and found that I had some bonus points for a discount on angus chuck roast. So, I couldn't pass that up.
I rubbed it in butter and sprinkled it with Trader Joe's 21 spice mixture (love that!)
Broiled it on low for 20 minutes on both sides and done!
My mom took half for her lunch, so this was mine. So good and juicy! I'm stuffed.

Onion-roasted Ribs Recipe
I found the original recipe here: Caveman Cuisine's Roasted Beef Ribs
I followed the recipe for the most part. Although, I don't cook with wine, so I used water for the sauce. I would've used bone broth, but I forgot to thaw some out! I cooked in a cast iron skillet. And, we had 4 ribs each, rather than the 2 in the recipe.
This turned out so darn good! The sauce was the clincher! We also had banana with almond butter, and milk.

Dinner - February 18, 2013
So, my mom really likes her NuWave oven. I still don't. She wants to cook everything in it! So far, the only thing I think turned out alright was the Cornish game hens last night. Everything else is either raw inside or tough and dry.
Tonight we had a really nicely marbled beef chuck roast. With Trader Joe's Dukkah spice blend rubbed on it.
It may look really good. And, the flavor was good ... but, tough and dry ... I ate half, though. It was huge! I will have the other half tomorrow. Drowned in butter!
