Garlicky Breaded Chicken Breast recipe
I found this recipe on AllRecipes and altered it slightly.
2 chicken breast halves
2 tablespoons Organic Pastures Raw Butter
3 cloves crushed organic garlic
2/3 cup Organic Panko Breadcrumbs
Preheat oven to 375 degrees F.
In a cast iron saucepan, melt butter with garlic. Dip both sides of chicken pieces in butter/garlic sauce, letting extra drip off, then lay in plate of breadcrumbs and coat both sides completely.
Place coated chicken in a lightly greased 9x13 inch baking dish. Combine any leftover butter/garlic sauce with bread crumbs and spoon mixture over chicken pieces.
Bake in the preheated oven for 45 minutes to 1 hour.
This served 2.

I'm trying to add more fresh mint to my foods, since I know I will have a LOT of it in the future, once I transplant this potted mint into one of my 18-gallon bins. So, I came up with this juicy treat!
3 organic Fuji apples, halved
2 organic kiwifruits
2 4-inch sprigs of fresh spearmint
Add ingredients to juicer opening (alternating apple, kiwi, apple, mint, apple, kiwi, etc. to make sure mint leaves get juiced properly.) This made about 12 ounces of minty-fresh juice!
Enjoy!

1/2 cup Straus Organic Whole milk
1 teaspoon baking powder
1 cup Bob's Red Mill Stoneground Whole Wheat flour

1/2 cup C&H Organic Pure Cane Sugar
1 teaspoon ground cinnamon
1/2 cup C&H Organic Pure Cane Sugar
1/4 cup Organic Valley Pasture Butter, melted
3/4 teaspoon ground nutmeg
1/2 cup Straus Organic Whole milk
1 teaspoon baking powder
1 cup Bob's Red Mill Stoneground Whole Wheat flour

1/2 cup C&H Organic Pure Cane Sugar
1 teaspoon ground cinnamon
Preheat oven to 375 degrees F. Fill muffin pans with 12 regular muffin cups.
Mix 1/2 cup sugar, 1/4 cup butter, and nutmeg in a large bowl. Stir in the milk, then mix in the baking powder and flour until just combined. Fill the prepared muffin cups about half full.
Bake in the preheated oven until the tops are lightly golden, 15 to 20 minutes.
While muffins are baking, place 1/4 cup of melted butter in a bowl. In a separate bowl, mix together 1/2 cup of sugar with the cinnamon. When muffins are removed from oven, use a basting brush to coat the tops with butter, then sprinkle sugar mixture over top. You can shake any excess back into the sugar mixture bowl. Let cool and serve.
This made 12 muffins.

OK. I got a bunch of odds & ends of seeds planted. Yay! I'll be planting more in a couple weeks - different ones. And, if some of these don't come up, I have more of the same I'll plant. I also planted some unknown heirloom tomato seeds that my mom had saved (don't think those will make it ...) I've put them on the ironing board in front of my bedroom window that gets good light most of the time. The egg cartons are setting on an old baking sheet, so no leakage. Once these sprout & get their first leaves, they'll be transferred to small pots until chance of frost is over. Then, they will be moved outside to the 18-gallon bins to grow and prosper!
I'll be putting an order in to Landreth Seeds (finally) next week, so will have plenty of seeds through the season for succession planting.

Apple/Pear/Ginger Juice recipe
I found this recipe in my old Juiceman book. He called it Ginger Jolt.
This is what I used:
2 Organic Pink Lady apples
1 Organic d'Anjou pear
1-inch raw organic ginger root
Wash fruit & ginger. Cut fruit in wedges. Juice 1 apple, then half pear, then the piece of ginger, then the rest of the fruit.

I saw this yummy recipe (http://www.drweil.com/drw/u/RCP00171/penne-and-broccoli.html) on Dr. Weil's site today & adapted it slightly.
2 cups organic pasta (your choice)
2 cups Woodstock Organic Broccoli Florets, cut into bite-size pieces with vegetable scissors
1/2 cup filtered water
1 Tablespoon De Cecco Extra Virgin Olive Oil
1 teaspoon Christopher Ranch Organic Chopped Garlic
2 pinches salt, separately
Organic Valley Raw Sharp Cheddar Cheese
1/2 teaspoon Trader Joe's Red Chili Pepper flakes
Half-fill a pot with water and a pinch of salt. Bring to boil, then add pasta. Turn heat down to medium and cook until the pasta is al dente.
While the pasta is cooking, use another pot & add broccoli, filtered water, olive oil, garlic & pinch of salt. Bring this to boil covered with a lid for 5 minutes. Remove lid, then condense remaining liquid while stirring.
Strain pasta, then add to broccoli mixture. Stir together.
Dish pasta mixture onto plates. Grate fresh cheese over pasta, to taste. Sprinkle pepper flakes over pasta.
Served 2.
